East Meets Southwest
As we approach the end of rainy April, I can’t help but think about Cinco de Mayo. The way I see it, it’s never too early to start gearing up for one of the greatest food and drink holidays of the entire year. I mean, what’s not to love about a holiday where it’s perfectly acceptable to drink margaritas and eat guacamole and queso dip all day long? I’ve got a slew of delicious eats and drinks coming your way as we countdown to Cinco de Mayo starting with this healthy East-meets-Southwest fusion taco.
Spice Up Taco Night with Almonds
Just when I thought sweet, slow-roasted Asian-spiced pulled pork tacos couldn’t possibly get any better, this spicy Sriracha Almond Sauce strolled into my kitchen. I am absolutely obsessed with NaturAlmond almond butters, the brainchild of Atlanta’s own entrepreneur, Jaime Foster. When you combine the nutty, creamy crunchy taste of all-natural, hand-crafted almond butter with the spicy Asian flavors of Sriracha and soy sauce, you end up with ultra-healthy fusion perfection. This sauce has changed my life and the way we do Asian-spiced pulled pork permanently. I promise that you will want to pour it on everything!
Slow Roasted to Perfection
I slow roast the pork in my favorite French oven but you could also throw it into your slow cooker the morning of your big party and then will literally just need a few minutes to throw the rest of this incredible meal together!
Suggested Wine Pairings
Pair this Asian-spiced pork slathered in the spicy, nutty sauce with an equally spicy Carmenère, jammy Zinfandel or ripe Syrah. If you prefer white wines, medium to full-bodied Gewürztraminer, Chenin Blanc and Viognier pair exceptionally well with spicy Asian flavors and pork dishes.
