Double Duty Appetizers
Do you know what you’re making for the big game this weekend? If you’re looking for something completely new, exciting and knock-your-shin-guards-off spectacular, then I’ve got you covered! I first made this for a holiday party in December, because I wanted to bring something unique that no one had ever even dreamed of, and then I made it again over Christmas break. Of course, that was partly because I had purchased the ginormous size container of dates at Costco and couldn’t think of a tastier way to use them. As if the creamy, dreamy bacon wrapped date and goat cheese dip isn’t a mouthful enough, the optional goat cheese-stuffed, bacon-wrapped dates that I use for garnish make this like two incredible appetizers in one! How’s that for a winning score?
Suggested Wine Pairings
The sweet, smoky and savory flavors in this rich dip call for a versatile wine with crisp acidity, subtle tannins and enough body to stand up to the creamy blend of cheeses. If you prefer red wines, look for a Pinot Noir, Cabernet Franc or Zinfandel. The decadent cheese blend will bring out the fruitiness in these wines. If you’re a white wine lover, a lively Sauvignon Blanc, un-oaked Chardonnay or dry Chenin Blanc would be a refreshing compliment to this dreamy dip.
