The Ultimate Baked Cheese Dip
This is hands-down one of my absolute favorite baked cheese dip recipes ever! I just love the simplicity of ingredients and how quickly it comes together. There are so many layers of flavor that shine through with each delicious bite, from the rich blend of creamy cheeses, to the unmistakable hint of spice, and the bite of the green onions all woven together with the sweet acidity of fresh tomatoes. This dip is extremely portable too and it’s just as delicious hot out of the oven as it is served at room temperature. It never fails that I get multiple requests for this easy recipe anytime I serve it. Keep it handy so you can pass the deliciousness along to your friends!
Suggested Wine Pairings
Look for a dry, acidic wine to cut through the rich combination of cheddar, cream cheese and sour cream and to complement the tart tomatoes. In addition, the rich cheese blend will help bring out the fruit and sweetness in the wine. If you prefer red wine, try a Pinot Noir, Spanish Rioja or a light or medium-bodied Italian red, like a Bardolino or Sangiovese. White wine lovers should look for a Sauvignon Blanc, un-oaked Chardonnay or dry Riesling. Like many other salty appetizers, a dry or off-dry sparkling wine would also be a refreshing compliment to this deliciously creamy dip.
