Game Day Favorites
One of my favorite things about fall, besides the cooler temperatures, changing leaves and cute boots, is Saturday college football. You know it’s all about the food for me. The play of the day is whatever hot and gooey snack I’m pulling out of the oven just in time for game day, like this incredibly tasty and easy dip made with super healthy kale, a ridiculously creamy blend of cheeses and my husband’s favorite, bacon. Cheese and bacon make just about anything taste better. It’s hard to believe that this irresistibly creamy dip is crawling with antioxidants and vitamins. Who knew kale had such a naughty side! If you don’t want to take a walk on the wild side, or you just can’t have bacon in your diet, leave it out and toss in some cut up cherry tomatoes for an extra shot of antioxidants. I’m a bit of a people pleaser, so I’ll often make two smaller servings of each. Everyone is happy.
Suggested Wine Pairings
This rich and creamy dip needs a medium to full-bodied wine with good acidity to cut through the rich combination of cheeses. Prosecco and other sparkling wines are favorites of mine to serve with this and other salty appetizers. The crispness cuts through the richness of the dip and the bubbles refresh the palate between bites. A Sauvignon Blanc or dry Riesling would also make for an equally refreshing partner. If you prefer red wine, try a Pinot Noir or a Tempranillo.
