Creamy Rich and Healthy
The key to making creamy hummus that rivals store-bought or restaurant-quality ones, is the generous use of Tahini, or sesame seed paste. You can find Tahini in the ethnic aisle of most major grocery stores but it can be quite pricey. I buy enormous containers of it for a fraction of the cost at a nearby farmer’s market. This delicious hummus has just the right amount of kick to it.
Hummus Flavor Variations
With this basic recipe you can make a dozen flavor combinations, not to mention that it’s the basis for my delicious Greek Hummus Layer Dip. Some of my favorites include Sun-dried tomato and Basil, Roasted Red Pepper, Spicy Cilantro Pesto and Avocado and Lime. Have some fun experimenting and discovering your own favorite combinations. Just add herbs, spices and other ingredients to the food processor and taste!
Suggested Wine Pairings
Nutty dishes like this creamy hummus can taste quite bitter if paired with a tannic red wine. Instead look for a slightly crisp white wine with medium to full body to balance the richness of the hummus, like a Sauvignon Blanc, Austrian Grüner Veltliner or un-oaked Chardonnay. If you prefer red wines, look for an earthy one with medium body and lower in tannins, like a Cabernet Franc or Pinot Noir.
