The Bounty of Summer
I love that our garden is full of ripe tomatoes and fresh basil every summer. It inspires meto make everything Italian Caprese style, from Pizza and Pasta a la Caprese to Caprese Chicken Salad, Eggplant Caprese and this decadently irresistible dip. And the really great thing is that since I keep Basil Pesto in my freezer, I can make this deliciously easy dip any time of year! Best of all this dip isn’t as oily as some of those other versions out there.
Suggested Wine Pairings
This dip is incredibly rich and creamy so it needs a medium-bodied wine with good acidity to cut through the rich combination of cheeses. In turn, the decadent cheese blend will help bring out the fruit and sweetness in the wine. If you prefer red wine, try a Pinot Noir, Italian Sangiovese or Barbera. White wine lovers should look for a Sauvignon Blanc, Pinot Grigio or un-oaked Chardonnay. Like many other salty appetizers, a dry or off-dry sparkling wine or Prosecco would also be a refreshing compliment to this deliciously creamy dip.
