A Fusion of New Orleans Style and Southern Taste
When life gives you lemons, you make lemonade, right? Well, when our garden stops producing sweet, ripe tomatoes, I fry those tart, green suckers!
This scrumptious recipe combine two of my great loves for the South and my hometown of New Orleans. Green tomatoes are extra tart so if you’re like me and enjoy serving them with a spicy sauce and tangy feta cheese, you will need to add a little sprinkle of salt to help bring the flavors into balance.
Suggested Wine Pairings
The tangy feta cheese and tart tomatoes call for a crisp white wine with bright acidity. Look for a Chenin Blanc, unoaked Chardonnay, Pinot Grigio, or dry Riesling. A light rose or sparkling Cava would also be a refreshing partner for these crispy tomatoes. If you prefer red wines, the tart tomatoes and spices in the Remoulade call for a bright, acidic wine with a bit of fruit and spice. Look for a spicy fruit-forward Grenache, Spanish Rioja or other Tempranillo-based red blend. A Tuscan blend, Sangiovese or Barbera would also be good options.
