The Queen of Green
Move over spinach and make room for the queen of greens! Kale is often referred to as the healthiest vegetable on the planet and if you take a look at the long list of health benefits and nutrients, it’s easy to understand why. But does this strong-smelling, rough-feeling, bitter-tasting leafy green actually taste good? I decided to put it to the test and try it out in some of my favorite recipes, starting with this pesto sauce.
Picture Perfect Pesto
Here’s a pesto that looks as good on your food as it does on paper. Not only is Kale Pesto a beautiful bright green color that just jumps off your plate, but this garlicky sauce is out-of-this-world delicious and has the ability to transform any ordinary dinner into a rockstar powerhouse meal that tastes absolutely incredible. The heart-healthy walnuts and extra virgin olive oil further add to the exceptional list of antioxidants, vitamins and other nutrients in this simple little sauce. I drizzled a little bit over a typical Caprese Salad and WOW! You’ll just have to try it to believe it. Luckily, fresh kale comes in enormous 18 ounce bags and since nothing ever goes to waste in my kitchen, we’re going to have some fun with kale over the next few days.
Suggested Wine Pairings
This garlicky powerhouse of a sauce is not shy. Dishes served with this Kale Pesto need a fairly substantial wine with forceful flavors and bright acidity to accompany it. Try a Zinfandel or a spicy Rosso di Montalcino, either of which will stand up to the garlicky bite in the sauce and contribute their own layer of spice. If serving the pesto drizzled over a tomato-based salad, look for a white with good acidity like a Chianti or Pinot Noir. For white wine lovers, an oak-aged chardonnay or any wine with vanilla and spice notes would also be a good choice with the walnuts, especially if you are otherwise adding cream to the finished dish. A Spanish Albariño, Italian Vermentino or Pinot Griogio would also stand up well to herby tomato-based dishes smothered in this rich pesto.
