Bold Blue Bison
I love a good burger, especially one that’s as full of intense flavor and easy to make as these blue cheese-stuffed bison burgers. Bison meat is naturally lean and robust so these burgers require minimal handling and prep work to yield excellent results. And it’s no secret that I am totally obsessed with cheese, so the fact that every bite of these juicy burgers is oozing with tangy blue cheese is a huge bonus for me. Call me crazy but I also like to melt some more blue cheese over the top and sometimes I go really crazy and add a couple slices of aged cheddar and bacon. My mouth is watering just thinking about it!
The Ultimate Burger
All you need to make these amazing burgers is ground bison meat, Worcestershire sauce, blue cheese, sea salt and fresh black pepper. I also like to add bacon, caramelized onions and remoulade sauce, while my husband opts for bacon, tomato, more bacon and some barbecue sauce. You really can’t go wrong with these. If I happen to have Dale’s seasoning on hand I’ll use that for the marinade instead of the Worcestershire. I typically shape my burgers to be about 6 oz each but you can easily make smaller “sliders” or a large half pound patty. The beauty about this tasty recipe is that you don’t have to follow a recipe. That also means you really can’t do anything to mess these up.
Suggested Wine Pairings
Bold, intense burgers like these beg for a robust red wine with enough tannins to cut through the rich combination of bison and blue cheese. Try a robust Cabernet Sauvignon or a juicy, spicy Australian Shiraz. For a nice splurge to go with this gourmet burger, my personal favorite is a big, bold fruit-driven red from the Southern Rhone region of France, particularly Châteauneuf-du-Pape.
