Happy Cinco de Mayo!
Today might as well be National Margarita Day. I’ve already enjoyed quite a few so it’s a good thing this flank steak has been marinating in a sweet and tangy citrus honey sauce since last night. A few weeks ago I showed you how to make the easiest and most delicious Cilantro Soft Taco Shells ever, and you better believe I made those ahead too. So I get to sit back and sip on fresh Citrus Lime Margaritas while Steve fires up the grill. Now that’s what I call a holiday!
Perfectly Tender and Full of Flavor
Carne Asada is Spanish for grilled steak. The citrusy honey marinade provides a sweet and spicy flavor and helps lock in moisture during grilling. In addition to steak tacos, I also love this juicy steak with creamy Avocado and Cilantro Pesto or served sliced on a Southwest-style salad. For an instant sauce, you can boil the marinade for five minutes until it becomes thick like a glaze and serve it alongside the steak. Don’t you just love delicious options?

These steak tacos are absolutely delicious served alongside any one of my speciality Margaritas. On any other night, I would reach for a wine with a variety of flavors to match these bold tacos. Try a glass of jammy Zinfandel, spicy Carmenère or a juicy Grenache blend.
