Better Than Fried Chicken
Growing up in New Orleans and having spent my entire life in the South, I’ve had more than my share of fried chicken. But sometimes I just want something a little healthier on my plate without sacrificing a single ounce of taste, crunch and fried goodness. That’s why I absolutely love panko and mayonnaise crusted chicken. It bakes up quickly in the oven and comes out perfectly moist and full of flavor.
The Crunchy Goodness of Peanut Butter
I had so much fun experimenting with Georgia Grinders all natural peanut butter last month that I decided to really put it to the test, and try it in my favorite oven fried chicken recipe. The result was even crispier, crunchier, perfectly moist chicken that literally melts in your mouth. Try these savory chicken strips as an appetizer served with a spicy peanut sauce, sliced on a healthy dinner salad or with a simple side of wild rice. This light, crispy and slightly salty chicken needs a light to medium-bodied wine to compliment the savory goodness without overpowering it. If you prefer red wines, look for a light-bodied, fruit-forward wine to balance the savory flavors, like a Gamay, Pinot Noir or Zinfandel. If you prefer white wine, try an acidic, aromatic wine like an un-oaked Chardonnay, dry Chenin Blanc or dry Riesling.
