Fresh Flavor Fast
I love the simplicity and versatility of this corn salad. I will often add other ingredients like avocado, crumbled Mexican queso fresco and diced jalapeños. It’s great for summer picnics and potluck parties because it’s just as delicious out of the refrigerator as it is served at room temperature. The recipe can easily be doubled for a large crowd.
Suggested Wine Pairings
The tangy vinaigrette and tart tomatoes call for a crisp white wine with bright acidity. Look for a Chenin Blanc, unoaked Chardonnay, Pinot Grigio, or dry Riesling. In addition, an herbal Sauvignon Blanc would help out bring the cilantro flavor whereas a semi-dry Riesling or Gewürztraminer would help tame the heat if adding jalapeños.
