In Style Potatoes
Is there anything more decadent than a classic potato gratin made with gooey layers of rich cheese and creamy potatoes? You had me at goat cheese, and white cheddar just sealed the deal. It’s like dressed up comfort food that you can serve at a fancy dinner party or dish up for a casual weeknight meal. Whatever the occasion and accompanying main dish, like that delicious Guinness-Spiked Corned Beef, this out-of-this-world gratin is sure to take center stage on your dinner table!
Time Saving Tips
If you have a food processor with a slicer attachment, you can have these potatoes prepped and ready to go in less than 20 minutes. Once you assemble the gratin, the magic happens while it’s baking unattended in your oven. You know I’m absolutely crazy about goat cheese and this combo of tangy goat cheese and sharp white cheddar is incredible, but feel free to substitute your favorite cheese and make this dish your very own.
Suggested Wine Pairings
Most likely I would pair the wine with the main dish, but if you happen to be making a meal of these creamy potatoes, which you totally could, they pair well with a Sauvignon Blanc, especially one that has seen a little oak. I, however, prefer a bolder wine with hints of tobacco and cassis, like a Cabernet Sauvignon or Merlot, to flatter the tang of the goat cheese and fullness of the sharp cheddar. For something different, try a dry rosé, which also goes exceptionally well with cheesy dishes. Rosés have the acidity of white wine and the fruit character of a red.
