Sweet Southern Flavor
It’s so hard coming back to reality after spending nearly a week in paradise. But I have to admit, I kind of did miss good old healthy home cooking, just a little bit. After indulging in poolside cocktails, taco specials, steak and lobster dinners and specialty burgers the size of my head, I am craving something healthy, not to mention fast because I still have a whole lot of unpacking to do. You know I’m a sucker for fried chicken, especially when it’s a healthier, juicier version that’s oven-fried to crunchy, moist perfection. You can serve these crispy honey nut crusted chicken strips as an appetizer with a side of honey mustard dipping sauce, as a main course with a side of mashed potatoes or macaroni and cheese or, my personal favorite, tossed on a satisfying main course dinner salad. I use walnuts for the crust for the extra boost of heart-healthy goodness, but if that’s too bitter for you, just substitute sweet Southern pecans. This crispy, slightly sweet chicken also pairs beautifully with tangy blue cheese crumbles.
Suggested Wine Pairings
The sweet and tangy combination of honey, walnuts and mustard calls for a crisp wine with bright acidity. White wine lovers, try a crisp sparkling wine, Sauvignon Blanc or light Pinot Grigio. If you prefer red wines, look for a light-bodied, fruit-forward wine to balance the nutty and tangy flavors, like a Beaujolais or Pinot Noir.
