Modern Greek Salad
I am all about jazzing up dinner with fabulous sauces, especially those are ready to go in my freezer. I’m still using up the last of our summer tomatoes and fresh herbs so I’ll definitely be making a batch or two of this tasty sauce. Nothing beats instant gourmet when you’re short on time and want to eat well and feed your family healthy food. This tangy pesto takes any dish to the next level. Drizzle it on your classic Caprese for an unexpected surprise or stir in more olive oil and use it as a salad dressing for an anything-but-typical Greek salad. It’s also amazing alongside steak or lamb or try stirring it into your favorite hummus or potato salad. The flavor possibilities are endless!
Suggested Wine Pairings
This savory and salty pesto screams of Mediterranean flavors so my first instinct is to reach for a red or white wine from Italy, Spain or Greece. I would also let the weight of the finished dish guide my choice. For instance, rich dishes containing steak or pasta would call for a medium to full-bodied wine, whereas lighter dishes made with chicken or fish would call for a more light bodied wine. If you prefer red wine, try a Spanish Rioja or Grenache-based blend. The savory olives would bring out and contrast the fruit-forward wine. An Italian Sangiovese or Greek Xynomavro would also be an excellent choice. If you’re more of a white wine drinker, look for a crisp, bright one to contrast the salty olives, like a Sauvignon Blanc or Spanish Albariño. A Greek Assyrtiko would also be a refreshing match.
