Game Day Classic
Fall is officially here. There’s a slight chill in the mornings, a cool breeze in the evenings and football is on our television all weekend long! I enjoy game day as much as the next girl, but for me football Saturday is really all about the food, like this classic dip made over with super healthy kale and a ridiculously creamy blend of cheeses. My husband absolutely loves artichoke dip and I love that I get to sneak good-for-you veggies in their party snacks. This irresistible dip is crawling with antioxidants, vitamins and all kinds of good stuff. So next time it’s your turn to host game day, whip out this dip but you might want to make a double batch because it won’t last until half time! I serve it with kale tortilla chips for a double dose of goodness.
If you like rustic, in other words chunky, dip, then you can just coarsely chop the artichoke and kale and stir together all of the ingredients. Personally, I don’t love huge chunks of artichoke so I just pop everything in the food processor for a creamy dip that goes down nice and easy. I’ve also made this dip with bacon crumbles added in, because sometimes we do things just to make our husband happy, and it was amazing. Just when you think a good thing can’t get any better, it totally does.
Suggested Wine Pairings
This rich and creamy dip needs a medium to full-bodied wine with good acidity to cut through the rich combination of cheeses. Prosecco and other sparkling wines are favorites of mine to serve with this and other salty appetizers. The crispness cuts through the richness of the dip and the bubbles refresh the palate between bites. A Sauvignon Blanc or dry Riesling would also make for an equally refreshing partner. If you prefer red wine, try a Pinot Noir or a Tempranillo.
