Good Enough for Company
This whipped potato is so easy to make but the layers of flavor and depth make it just special enough to serve to company. I like to use Rosey Goat cheese and grate the rosemary crust right in with the cheese. It adds an extra layer of yumminess to these already deliciously creamy potatoes. Spanish Manchego, a tangy sheep’s milk cheese, is a great substitute. These potatoes are a perfect accompaniment to everything from delicate fish and chicken to bold steak. For an extra special touch, I drizzle truffle oil over the top just before serving. And leftover reheat beautifully in the microwave!
