
Sage Pesto and Butternut Squash Lasagna
Savor the Flavors of Fall
This dish could be the poster child for fall eats. The Autumn flavors of sage, butternut squash and chicken come together in a comforting pasta dish that warms your heart and soothes your soul. Unlike my award-winning Fall Harvest Lasagna, which was runner up in the August Briggs Winery recipe contest last fall and takes days to come together, this lasagna is a cinch to make. If you’re like me and keep the basic components in your freezer, you could throw this thing together in thirty minutes or less and enjoy it anytime of year. Best of all, it’s full of complex flavors and delicious enough to serve to company. Your friends will totally think you slaved all day on this masterpiece. Your secret is safe with me.
Ingredients
6 Lasagna Noodles
10 oz Ground chicken, cooked
1/2 cup Sage and Basil Pesto
12 oz Butternut Squash Puree
1 large egg, beaten
16 oz Ricotta Cheese, regular or part skim
4 oz Pecorino Cheese, grated
12 oz Mozzarella, shredded
1 large egg, beaten
1 tsp Salt
Italian Seasoning, to taste
13 by 9 inch rectangular baking dish or similar
Preparation
- Cook noodles according to package directions.
- Mix together ground chicken and pesto. Set aside.
- Combine ricotta, pecorino, egg, salt and Italian seasoning to taste. Set aside.
- Combine butternut squash and egg. Set aside.
- To assemble the lasagna: spread all of chicken in bottom of dish; cover with 3 noodles; spread half of ricotta; half of mozzarella. Spread all of butternut squash carefully. It's ok if some of the mozzarella gets mixed into this layer as you're spreading.
- Top the butternut squash with 3 noodles, remaining ricotta and remaining mozzarella. Sprinkle Italian seasoning over top.
- Bake at 375 degrees for 30 minutes. Let it cool for 10 to 15 minutes before cutting.
