Fall for Guacamole
Birthdays are a pretty big deal at our house. We don’t just celebrate one day. For us, birthdays are often a week long and sometimes month long celebration. One of the many restaurants we visited during my most recent birthday was Alma Cocina, an upscale Latin/Mexican restaurant located in Downtown Atlanta. Although we just stopped in for a quick round of margaritas, the Butternut Squash Guacamole with chipotle peppers and queso fresco immediately caught my attention. I absolutely love avocados but never in a million years would’ve dreamed of pairing them with any kind of squash. So we tried it and I am so happy we did. The fusion of creamy avocados with sweet butternut squash, spicy-smoky chipotle peppers and tangy queso fresco was just out-of-this-world delicious. The complex array of flavors came together perfectly and I couldn’t wait to re-create this tasty appetizer at home. Lucky for me I had just made two enormous batches of Butternut Squash Purée which would unexpectedly star in this spicy and delicious guacamole.
Suggested Wine Pairings
This sweet and spicy guacamole calls for a crisp white wine with bright acidity and fruit flavors. Try a Chenin Blanc, unoaked Chardonnay, Pinot Grigio, off-dry Riesling or aromatic Gewurtztraminer. If you prefer red wines, look for a light bodied one with soft, bright tannins like a Pinot Noir or Beaujolais. A sparkling Prosecco would also be extra refreshing with this delicious and creamy appetizer. This fall flavored guacamole also pairs perfectly with any of my fruit-driven flavored margaritas.
