Healthy Dinner Salads
After a long holiday weekend of cookouts, grilling, parties and eating decadent food, the only thing I’m craving is a light yet satisfying dinner salad. I’ve got a wide variety of healthy salads to choose from and they are anything but boring. How does a black and blue salad with grilled pepper flank steak and blue cheese sound? Or maybe crispy panko crusted chicken with tangy goat cheese is more your thing. I love them both but today I’m going for this crazy easy, fast and fresh Blueberry, Strawberry and Feta salad with homemade Blueberry Lime Vinaigrette and I’m going to toss some savory sliced rotisserie chicken on it for a little extra protein.
