
Creamy Whipped Cauliflower and Kale Pesto
Re-Defining Comfort Food
I’m still on a kale kick and kale pesto has been front and center in my kitchen lately. What’s not to love about the ultimate super food when it tastes so incredibly good especially in garlicky pesto form? Plus, if you are watching your carb intake and have a weakness for creamy whipped potatoes, this is the absolute perfect comfort food for you! This creamy cauliflower and kale pesto puree is so dreamy, you’d never guess it’s loaded with healthy, good-for-you vegetables. My husband started eating it and didn’t even realize that it wasn’t mashed potatoes thanks to the similar texture, minus the calories, of puréed cauliflower. Try it in place of potatoes in any of your favorite whipped potato recipes! I like to serve this one with seared swordfish. They were just made to be together.
Ingredients
1 Cauliflower Head
2 Tbs Light Sour Cream or Cream Cheese
2 Tbs Kale Pesto
1/2 tsp Sea Salt
1/8 tsp Fresh Cracked Black Pepper
Preparation
- Wash the cauliflower and cut into florets.
- Put the florets into a large pot and cover with water. Boil for 10 to 12 minutes or until tender. Drain the florets and return them to hot pot to dry out any remaining water. Carefully shake around for 1 minute.
- Place all ingredients in a food processor or blender and whip until it's smooth and creamy.
- Serve with your favorite meat dish or my personal favorite, Seared Swordfish with Kale Pesto.

Suggested Wine Pairings
If you prefer reds, look for a medium-bodied one with bright acidity like a Pinot Noir from Oregon or California. White wine lovers should look for a crisp light to medium-bodied wine with some herbal qualities to compliment the pesto-based whipped cauliflower, like a Sauvignon Blanc, Spanish Albariño or Italian Vermentino. If you prefer reds, look for a medium-bodied one with bright acidity like a Pinot Noir from Oregon or California.
